Savoury Muffins 

Hello everyone, today I have been baking away to give you a recipe to kick start the new year. Mini savoury  muffins (courgette and sweetcorn flavour) ideal for an easy breakfast or on the go snack!



1 tin of sweetcorn

1 courgette

Parmesan cheese 

2 eggs beaten

2 handfuls of spinich, shreaded 

100 grams whole flour

100 grams self raising flour

Grate the courgette into a bowl  and add the sweetcorn and shreaded spinich. Then add the rest of the ingredients and mix to give a wet mixture. Put 2 spoons on mixture in each cupcake case (makes 12) and bake for 20 minutes at 150 degrees c.
