Try using a teaspoon to eat foods such as fruit and yoghurt, because it takes longer to eat the meal and you are more likely to feel full at the end!

Vegan friendly breakfast muffins x3

Hello everyone, recently I have taken to having a breakfast muffin and a fruit smoothie for breakfast, as its a nice healthy (and may i add cheery) way to start the day! I tried out 3 combinations this week, enjoy:

Peanut butter & banana:

1 mashed banana

1/2 teaspoon baking powder

3 teaspoons coconut oil

100g self raising flour

2 scoops of chocolate protein powder

Soya milk
Raspberry:

2 handfulls of mashed raspberries 

1/2 teaspoon baking powder

3 teaspoons coconut oil

100g self raising flour

2 scoops of strawberry protein powder

Soya milk
Banana, walnut and rasin:

1 mashed banana

1/2 teaspoon baking powder

50g rasins

100g crushed walnuts

3 teaspoons coconut oil

100g self raising flour

2 scoops of chocolate protein powder 

Soya milk

Place all the ingredients in a bowl and stir, adding enough soya milk until the mixture is wet. Spoon into 5 cupcake cases and cook for 20mins at 150C (the ones with the mushed banana take a bit longer to cook, poke with a folk to make sure they arnt raw inside). I freeze my muffins and defrost in the morning.
